This natural processed coffee is grown and processed entirely on-site at Mount Sunzu's own wet and dry mill in Mbala, northern Zambia. After selective picking, ripe cherries are floated before being spread directly onto raised drying beds for 30 days, covered at night and during rain to protect against moisture. Once dried, the coffee is hulled, graded, hand winnowed, and sorted in Mount Sunzu's dry processing facilities - a level of end-to-end control that is relatively rare in the region.

Zambia produces relatively little specialty coffee - Mount Sunzu is one of the producers beginning to change that. The farm has been developed from the ground up since 2018 on a 780-hectare plot with a long agricultural history, and its approach to production is built around long-term environmental and social responsibility. Of their 780 hectares, 600 are actively reforested with native Miombo forest, and a solar-powered irrigation system reduces reliance on fossil fuels. Over 120 full-time employees work on the farm year-round, all receiving fair wages, pension contributions, and health insurance — a standard that remains far from guaranteed in agricultural contexts.
