Zambia produces relatively little specialty coffee - Mount Sunzu is one of the producers beginning to change that. Operating near the country's highest peak in Mbala, northern Zambia, the farm has its own wet and dry mill on-site, giving the team full control over processing from cherry to export-ready green. After selective picking, ripe cherries are floated and pulped before undergoing 24 hours of dry fermentation in 1000ml tanks, using naturally occurring yeast and bacteria. The coffee is then dried on raised beds for 10 days, covered at night, before being hulled, graded, and hand sorted on-site.

Founded in 2018, Mount Sunzu has built its operation around a clear commitment to both quality and sustainability. Six hundred of their 780 hectares are reserved to protect native Miombo forest and Dambo wetlands, and the farm runs on a 92kW solar energy system — a meaningful effort to reduce emissions in a region where such infrastructure is far from standard.
